You must get a "detaxe" reciept & form from the store. The form and reciept must be presented to customs when leaving France. The tax reimbursement will be mailed to you.
Tipping Protocol French meals usually include a "service charge" of 12.5 to 15 percent with your meal, which is like a tip in the US. It can also be called a "bread", "water" or "table" charge. Most people also leave a few Euro cents behind - 30 to 50 Euro cents is appropriate for cafes or brasseries.
